Recipe #7: Bacon-Apricot BBQ Bites

Ingredients

1 cup Trelawny Red Spicy BBQ Sauce

12 thick slices smoked bacon

24 dried apricots

24 toothpicks

4-6 mouths


Preparation

Cook bacon until halfway done (needs to be flexible). Remove bacon slices from heat and cut in half. Wrap each half piece of bacon tightly around one apricot. Secure bacon to apricots with a toothpick. Place bites in a shallow baking pan lightly coated with pig fat from first bacon cooking. Finish cooking bites under a broiler. Broil until bacon is brown and crisp. Bites will need to be rotated to get all sides of bacon cooked. When bacon is finished, coat bites with Trelawny Red Spicy BBQ Sauce and cook an additonal 10 minutes. Let stand 5 minutes, remove toothpicks and put in mouths.

Verdict

A little spice and pig meat mixed with sweet. It can't be beat.
